Almond Gingerbread


Ingredients: Gingerbread Almond Gingerbread

  4 whole eggs
250g sugar
1/2 tsp. bakeing soda
400g ground almonds
each 50g candied orange and lemon peel
1 ts ground cinnamon
1/8 tsp. ground cloves, nutmeg and allspice
1 egg yolk
40 blanched halved almonds

Beat the eggs and the sugar in a bowl until you've created a very ligth custard. Sift together the flour and baking soda and add the almonds, candied fruit, cinnamon, cloves and the allspice. Mix this with the custard and knead until you have a smooth dough. Wrap the dough in cellophane and let it chill for two hours in the fridge.

Preheat the oven to 180°C. Put flour on a well floured surface and roll out the dough 1cm thick. Cut it into equal squares. Place the squares on a lined baking tray. Mix the egg yolk with a little water and brush it on the squares. Put half an almond on each edge of the squares. Bake for 20min. until they are light brown. Let them cool on a cooling rack.
