Macaroon Rings


Ingredients: Makronen Macaroon Rings

  4 egg yolks
50g sugar
zest of half a lemon
250g almond paste
1 tbs. rum
100g chocolate icing
50 g chopped pistachios
50g silver sugar sprinkle

Beat the egg yolks with sugar and the lemon zest until very light. Knead in the almond paste and rum. Pour it into an icing bag with a star metal tip. Preheat the oven to 190C. Squeeze little 1 1/2 cm rings on a lined baking tray. Bake for 15-20 min and let the cookies cool on a cooling rack. Melt the chocolate icing in a double boiler and cover each ring with the chocolate. Decorate the rings with pistachios and the sugar sprinkles.
