Ingredients: Shortcrust Black and White cookies

  300g butter
150g icing sugar pinch of salt
400g flour
30g cocoa
1 egg white

Recipe:
 
Knead butter with icing sugar and salt, sift the flour over it and knead until you have a smooth dough. Split the dough in half and blend the cocoa with one of the halfs. Let both parts chill in the fridge for two hours.


Preheat the oven to 190C. Cut a little piece from each portion of the dough and roll it out 2mm thick on a floured surface. Brush beaten egg white on one of the rolled out pieces and place the other on top of it. Form rolls with it. Wrap the rolls in cellophane and let them chill for anther two hours in the fridge. Slice the rolls in 1/2cm thick pieces and place them on a lined baking tray. Bake for about 10 min. Let the cookies cool on a cooling rack.
